Buckwheat-Teff Hot Cereal

A super-easy breakfast treat, this all-grain cereal requires no prep, is very tasty and quite nutritious. Serving variations are endless: use milk or nut milk, cream or yoghurt, sweeten with syrups or sugars or just eat it straight from the saucepan.

Yield: One, six-ounce serving

Time to prepare: 20 minutes

Tools needed: Measuring cup and spoons. 2-quart saucepan. Stirring spoon.

Ingredients

3/4 cup water
2 Tablespoons teff grain (see notes below)
2 Tablespoons buckwheat cereal or groats (see notes below)
pinch salt
milk or nut milk for serving
brown sugar or syrups for serving

Notes:

Teff grain and Buckwheat Hot Cereal can be ordered from Bob's Red Mill. Buckwheat groats can also be used by coarsely grinding in a spice grinder or burr grinder.

Procedure:

1) Place water, salt and teff in the saucepan. Bring to a boil, then reduce to a simmer. Cover, stirring occasionally, and cook for 10 minutes.

2) Add the buckwheat. Continue to simmer with occasional stirring until cereal thickens, about 5 minutes. Cereal can be cooked up to 5 minutes longer or removed from heat once the texture is pleasing to you.

3) Remove from heat and cover while you find a bowl and spoon. Serve cereal with milk, nut milk, brown sugar, honey, and/or fresh fruit.
